Inspired by the joyful Italian approach to cuisine and the superb ingredients of the Comox Valley, Chef Andrey Durbach will prepare classical regional Italian dishes. Trained at The Culinary Institute of America, New York, Chef Durbach has spent the last 20+ years operating some of Vancouver’s best loved neighbourhood restaurants: Etoile, Parkside, La Buca, Pied-a-Terre and The Sardine Can. While heading up the kitchen at Vancouver’s legendary Bishop’s Restaurant in the fall of 2016, the opportunity arose to purchase the charming yellow house and orchard garden in downtown Courtenay that has become Il Falcone. Andrey and his wife Sian are delighted to bring their love of food, wine and restaurant culture to the Comox Valley.
